(Beginning with a questionnaire, this "no-strings attached" service offers a custom-designed menu, recipes and fabulous ideas that fit the mood and style of your unique event. This service is great for those who wish to self-cater their own event, need to hire a budget caterer or where geographic logistics make it unfeasible for us to physically cater your event.)

Food Stylist ~ $100.00 per hour + materials
(This one is a great service if you are planning to self-cater your own event, but want a culinary artist to come in and make the food displays look sensational!)

Catering Deposit- To secure the services of Canopy Rose Culinary Arts Studio and Catering Company for a wedding, banquet, holiday party or other large event, we require a $500.00 non-refundable deposit to hold the date. The deposit is applied to the Special Event Pre-Orchestration Fee.

After the menu and services are agreed upon, a fifty percent deposit is due, with the final balance due in full at least 14 days prior to the event.

Lose Twenty Pounds By The Holidays


It was last year at this time, just a few days before Halloween, when I embarked on a weight loss program. By January 1, I had lost thirty pounds and wrote about it in my newspaper column.

Now almost a year later, I've lost nearly 90 pounds and my whole world is undergoing an amazing metamorphosis.

Despite some traditional thinking that suggests waiting until January 1 to engage in a weight loss program, I'm here to say that it is actually a very savvy strategy to start your new year's diet resolutions before the holiday season even begins. Attack that enemy head-on!

I'll be teaching some cooking classes especially geared around holiday foods that are good for your heart and your waistline.

Two Great Concerts

Two great concerts are going on tonight in Tallahassee. Both are concerts I would have loved to have gone to, but as usual I find myself in the office tapping away at the keyboard.

No Pops In The Garden at Maclay Gardens or Enjoying the Music of Japan Under The Centuries-Old Oaks at Goodwood Museum and Gardens for this writer.

"Maybe next time" I say to myself and that is when the words of this morning's sermon come back to bite me. Perhaps, I am a workaholic. Truth be known, I have often chosen work projects over family or social gatherings. But I thought that was ok and actually a noble thing for a single, unencumbered female to do. Apparently according to the sermon, it is not. So once again I fail at another half-hearted stab at perfection.

Next time I think I'll go to the concert and leave the work for Monday morning who knows maybe I'll even call and reserve some Mamma Mia tickets!

Time For A New Computer ... Or Maybe Just More Memory

I'm overdue for a new computer. Last one I bought was about three years ago and it just doesn't seem to have the power that I need these days.

A catalogue arrived in the mail from Dell and for the first I really studied each page.

My question though is do I really need a new computer or could I simply get by with just some Dell Memory?

Dieting and Looking Great In Tallahassee

Last year around this time I started a diet program at Winner's Weightloss. As difficult as it is to stay on a long-term weight loss regime, through the help I've received from Lori and Ruth, I've actually lost close to 90 pounds.

I can't say I've been the best patient, though. The truth is it has been very difficult for me. When I get stressed, I find comfort in food. This is an old pattern for me that can be traced back to my earliest memories. Fortunately, as a child I was very active and developed quite a bit of muscle.

The word obesity didn't even register on my radar until recent years when I decided to take my head out of the sand and do something about my out-of-control weight problem.

People are constantly saying, "Wow Kathi! You look great! What are you doing?"

Here is my response:

Chocoholic Urges

I've heard of alcohol rehabs and drug rehabs, but I wonder if there are rehab centers for chocoholics.

Surely it is an addiction when someone can not keep chocolate in their home without gobbling it up in record time.

I've come to realize that chocolate, sweets and carbs can easily turn into my drug of choice if I allow them to do so.

My strategy is to keep these dangerous substances out of harms way, but that still doesn't always stop my mind from longing for a decadent, chewy, multi textured and orgasmic chocolate lovers dessert.

See what I mean, maybe even chocoholics need a treatment center, too.

In Praise of Pens, Journals and Q& A

Give me a pen and a journal and I'm a happy camper!

For me, clarity and understanding comes through the meanderings and musings penned on paper, bound in a nice book.

Just about every question that I have about this journey through life gets posed on these lined pages of my journals.

The extraordinary thing is that the journal returns answers! Are they from the lips of the divine? Or are they from me? Or are they from a masquerader of one just pretending to care? I never really know for sure. Of course, my constant prayer is that the answer is an answer from my SAVIOR!

Setting Up A Booth At An Antique Mall

I'm moving!

While this is something I am excited about, the idea of dealing with all my stuff is not something I am looking forward to dealing with.

I have too much stuff!

But I've come up with a really great solution! I'm setting up a booth at an antique mall, vintage, and second hand shop.

I can't wait to unload all my small treasures that I once thought I just couldn't live without. There will be plenty of tabletop, household, decorator and fashion jewelry going up for sale later this week.

Shifting Nests

It's one thing when you are in nesting and cocooning mode, furnishing your home with all the perfect stuff to make a comfy and accomodating nest. But when you get ready to move.... watch out!

Those big wonderful pieces of furniture are a huge hassle and expense to move- ah home furniture, can't live without it, but boy-oh-boy what a burden when it comes time to shift nests.

"Let's go to Williamsburg for Thanksgiving."

"Williamsburg! I thought you wanted to stay at home and do an old fashioned Thanksgiving with Roasted Turkey and Oyster Stuffing. Then get a headstart on Christmas by going and chopping down our own Christmas tree in the woods."

"Why can't we do all that in Virginia?"

"Virginia sounds good. Maybe we could go visit my kin folk while we are there. too. "

"I was looking at some different Virginia bed and breakfasts we could stay at online."

Camping In The Woods

"Lets go to the mountains and see the autumn colors, Kathi," my friend said to me last week.

"Sounds like a great idea. I'd love to get away from Tallahassee for a long weekend this month."

"Then its a date? I'll find us a campground."

"Campground? Do you think we are a couple kids?" I said with alarm in my voice.

"I was sort of imagining a bed and breakfast or at least a nice cabin in the woods."

"Well I have all this brand new camping gear that I would love to use. We can stay at a lodge and check out the beaufort nc real estate. Maybe we'll buy a piece of property with a mountain stream on it. Then would you not be so objectionable to camping?"

Kathi Wins Writing Award

Canopy Rose owner, Kathi Dameron has won the 2nd Place Award in the Newspaper Article Category at the 2008 Southern Christian Writer's Conference in Tuscaloosa, Alabama for her article, Simple Act of Sharing Food Can Truly Bring People Together. This article appeared in the Northeast Chronicle - Tallahassee Democrat during the spring of 2008 in the Entertaining with Kathi column.

Grand Prize Winner In Cooking Contest

The year was 1987 when Kathi Dameron, a passionate gourmet cook who spent her days teaching 32 second graders, and her weekends hosting fun parties for her circle of friends at her waterfront home on Florida's North Hutchinson Island, won two prizes in the first cooking contest she ever entered. One of these prizes was the coveted Grand Prize. At that moment Kathi knew that one day in the not too distant future her special dream to launch her very own catering company would be realized. Seven years later that day arrived with the birth of Canopy Rose in Florida's Capital City in 1994.
