(Beginning with a questionnaire, this "no-strings attached" service offers a custom-designed menu, recipes and fabulous ideas that fit the mood and style of your unique event. This service is great for those who wish to self-cater their own event, need to hire a budget caterer or where geographic logistics make it unfeasible for us to physically cater your event.)

Food Stylist ~ $100.00 per hour + materials
(This one is a great service if you are planning to self-cater your own event, but want a culinary artist to come in and make the food displays look sensational!)

Catering Deposit- To secure the services of Canopy Rose Culinary Arts Studio and Catering Company for a wedding, banquet, holiday party or other large event, we require a $500.00 non-refundable deposit to hold the date. The deposit is applied to the Special Event Pre-Orchestration Fee.

After the menu and services are agreed upon, a fifty percent deposit is due, with the final balance due in full at least 14 days prior to the event.

By booking early, not only will you save on the stress often associated with finding a caterer at the last minute, you may also save hundreds of dollars off the cost of the catering bill. Caterers will generally give you a better price when you book during their slower seasons.

2. Keep your Menus Fresh and Exciting
Don't just go with the same ole' same ole. The last thing you want to do is bore everyone to death with the expected. Find a caterer that will help bring your party to life with innovative food selections.

3. Stay current about local happenings in the culinary field- Google it!

10. Pay Your Deposits On Time and Send A Thank You Note
Caterers and venues generally require that deposits be paid at the time of booking. Final balances are usually due a week or two before the event. Be proactive in getting checks cut for the caterer in a timely manner. By all means send your caterer a thank you note after the event.

Directions to Canopy Rose Culinary Arts Studio and Catering Company:

Canopy Rose is located in historic downtown Havana, Florida - a quick jaunt away from Tallahassee.

Just take Hwy. 27 (North Monroe Street) and head west past the Tallahassee Mall. Stay on 27 the entire way till you get to downtown Havana. The trip will take about 15 minutes, give or take five or ten, depending on where in Tallahassee you will be coming from and the amount of traffic. It usually takes me about twenty minutes to drive from the studio in downtown Havana to the heart of Killearn. But if traffic is heavy, the time could be much longer. To be on the safe side- allow extra travel time!

When you get to downtown Havana, you can't miss us! Canopy Rose is on the corner of Seventh Ave. and Hwy 27. We are directly across from H & H Antiques and next door to the Havana Herald newspaper. Cooking with Goat Cheese


Chevre, Montrachet, Bucheron.... I love 'em all! When the opportunity arose this weekend to visit a nearby goat dairy, I jumped on it and soon found myself jaunting down old country backroads.

Were it not for the bright yellow stripes running along the roadway, I could have easy felt as though I had time-traveled back to a by-gone era.

Visions of favorite goat cheese recipes danced in my head, as an article idea for my newspaper column began to play out. Some yummy scripts for future cooking classes soon followed.

While traveling along in my trusty old jauntmobile, I understood once again how a Midwestern transplant who has lived in New York, London, Chicago and LA can put down roots in this special geographic region. One simple answer: VALUES! Values you can almost taste. Driving these old North Florida and South Georgia roads stir fond memories of simpler times and discovering delicious treats like fresh artisan goat cheese bring back memories of long ago adventures in the French countryside and weekend trips to Napa Valley.

No our area is not Montrachet or Napa Valley, but it does have its very own unique raison d' etre worth exploring and savoring! Stay tuned for some cooking with goat cheese down the road!

Please keep in mind that event venues book up fast. If the date you want is already taken, we might be able to help you find another suitable site for your special occasion. A 50% deposit is generally required by the venue to reserve a space. Spaces rent from a few hundred dollars for smaller sites to well over a thousand, often depending on the time of year and the day of the week. For example a Saturday night before Christmas in the month of December will generally rent for a much higher rate than a Wednesday afternoon in July. If you wait too long to finalize your site reservation, you may not be able to get the site of your choice.

Also some sites will allow you to bring in your own caterer, while others have an exclusive list of approved caterers. As the owner of one of North Florida’s and South Georgia’s premiere catering companies, Canopy Rose, I will be happy to furnish you with a list of delicious food recommendations to fit your budget and taste preferences or if your budget is too tight for full service catering, I’ll be happy to teach you some great secret strategies on how you can self-cater your event and save a bundle!

Canopy Rose's Greek Isles Mediterranean Salad
Kathi's favorite! Simply delicious! All sorts of crisp greens, colorful fresh veggies, a generous mound of Kathi's homemade potato salad, assorted olives, feta cheese and accompanied by Kalamata Olive -n- Herb Vinaigrette. Can be ordered with or without seafood.

Paella Salad
This one is our version of a Tallahassee, Florida favorite. We discovered this recipe back in 1988 in "Thymes Remembered" ~ the Tallahassee Junior League cookbook. It's been a keeper ever since! This is a popular salad for elegant spring and summer lunches, brunches and dinners. We like to add a generous catch of Apalachicola Shrimp to the salad, along with some unique Canopy Rose touches. The composition of yellow saffron rice, marinated tomatoes, assorted veggies, chicken, and olives is dressed with a delightful spritz of homemade tarragon vinegar.

Canopy Rose Caters The New Tallahassee Costco V.I.P. Grand Opening Party

On Tuesday night April 8, 2008, Canopy Rose Culinary Arts Studio and Catering Company had the great pleasure of catering one of the premier highlights of Tallahassee's spring season - the V.I.P. Grand Opening Celebration of the brand new Costco.

Over 4500 guests were invited to sample from the groaning tables overflowing with yummy gourmet easy-serve edibles.

Red, white and blue linen - adorned stations were strategially spaced out throughout the brand new store.

Every food item served is available seven days a week from the store's large and impressive inventory.

Canopy Rose has one of the most generous pay scales of anywhere in the industry.

CEO, Kathi Dameron designed the payment plan after taking a sabbatical of sorts from owning Canopy Rose Catering, a premiere North Florida catering and special event company that catered to the Who’s Who of Florida for over a decade.

During her sabbatical, Kathi had the opportunity to work as an employee on a couple of different occasions and was able to see things from an entirely different perspective.

What she saw was that many businesses are not fair to the staff who are the real backbone of the business.

It didn’t take long for Kathi to adopt the mind-set of “worker advocate.”

This enlightened advocacy viewpoint is the basis for a unique employee pay incentive structure that not only trains, supports and empowers the staff of Canopy Rose Culinary Arts Studio and Catering Company but also generously rewards them for their hard work, dedication and commitment to culinary and special event excellence.

Event staff at Canopy Rose earn between $10.00 to $25.00 per hour.

All event staff begin at $10.00 an hour on their first event, then with each successive event their rate of pay increases in five cent increments until they reach a $25.00 cap (which occurs on the 300th event that they work with Canopy Rose.)

Once a member of the Event Staff attains the $25.00 cap, they will become eligible for company bonuses, which is another great incentive and reward for valuable contributions in building a great business.

Kathi Wins Writing Award

Canopy Rose owner, Kathi Dameron has won the 2nd Place Award in the Newspaper Article Category at the 2008 Southern Christian Writer's Conference in Tuscaloosa, Alabama for her article, Simple Act of Sharing Food Can Truly Bring People Together. This article appeared in the Northeast Chronicle - Tallahassee Democrat during the spring of 2008 in the Entertaining with Kathi column.

Grand Prize Winner In Cooking Contest

The year was 1987 when Kathi Dameron, a passionate gourmet cook who spent her days teaching 32 second graders, and her weekends hosting fun parties for her circle of friends at her waterfront home on Florida's North Hutchinson Island, won two prizes in the first cooking contest she ever entered. One of these prizes was the coveted Grand Prize. At that moment Kathi knew that one day in the not too distant future her special dream to launch her very own catering company would be realized. Seven years later that day arrived with the birth of Canopy Rose in Florida's Capital City in 1994.
