Canopy Rose Prepares A Trio of Summer Salads for Tallahassee Catering

For this June 2012 Tallahassee, Florida catering job, our client requested three different salads for a working luncheon for thirty people. 

Salad #1 was a delicious Pasta Pesto Salad with Penne Pasta, Fresh Herbs, Feta Cheese, Black Olives, Sun Dried Tomatoes, Fresh Mozzarella, Fresh Spinach, Grape Tomatoes, and a Creamy Pesto Dressing

Salad #2 was a colorful antioxidant- rich Garden Party Salad with Fresh Seasonal Greens, Grape Tomatoes,  Cabbage, Spinach, Orange Peppers, Yellow Peppers, Sugar Snap Peas and Cranberry Craisins.

Tallahassee Greek Fusion Shrimp Salad by Chef Kathi is perfect for summer catered events


This Tallahassee Greek Fusion Shrimp Salad by Chef Kathi is just perfect for summertime catered events.  Mixed Greens, spicy seared shrimp, baby spinach, cute little grape tomatoes, lemon-spiked avocado, feta cheese crumbles, kalamata olives,  and our to-die-for homemade potato salad is accompanied by homemade Balsamic Vinaigrette for a flavor explosion that will have the diner's taste buds dancing with joy.

Feed their brains with this delicious sandwich. It is a well-documented fact that tuna is the perfect brain food.

We invented this sandwich in the Canopy Rose Catering kitchen today with our Tallahassee corporate catering clients in mind. However, with just one bite we knew just about anyone would love this flavorful sandwich. We sure did.

For this lunch, we fired up the panini grill and pressed the tuna sandwiches. Delicious.

This salad gets kicked up a notch with peppered pears


Summer Salads... they are perfect for summer entertaining. Salads are also ideal for working luncheons, like the sort I'm having right now in the office at Canopy Rose. Yep, caterers have to eat, too!

So what did I do to make this salad extra special? White Balsamic Peppered Pears!

How do I make them? With great simplicity!

Wash and chop fresh Georgia peaches, place in a bowl. sprinkle with fresh ground pepper, white balsamic vinegar and a pinch of fresh snipped herbs from the garden. (You can add other ingredients, but for this salad, the simplicity seemed perfect.) You could also flash-grill your peaches, which would look and taste absolutely divine.

Grilled Asparagus Wrapped in Proscuitto

Imagine pencil-thin asparagus, wrapped in Italian Prosciutto, drizzled with a fragrant herbal/ balsamic- olive oil and flash grilled to perfection. Cooking with Chef Kathi on a Saturday Night


What does a chef cook at home on Saturday night when she's not working? The chef at Canopy Rose Catering, a popular Tallahassee catering company that has cooked for kings, presidents, governors and most of the Who's Who of Florida politics since 1994, likes to keep things simple. But even as simple as this rustic chicken dish was, Kathi's husband, the preacher, declared, "Now this is fit for a KING!"

OK, Here are the steps involved:


Preheat oven to 400 degree
Step 1: Line pan with foil and spray.
Step 2: Add chicken thighs. Drizzle with white balsamic  vinegar and Canopy Rose  Specialty Seasoning Blend.
Step 3: Run out to the garden and snip some fresh herbs. Chef Kathi used fresh basil, fresh chives, fresh thyme and fresh mint. Return to kitchen, wash and chop.
Step 4: Chop Vidalia onion and Red Skin Potatoes and arrange with chicken on pan.
Step 5: Drizzle with olive oil and dust with a bit more Canopy Rose Specialty Seasoning Blend.
Step 6: Pop into hot oven.

Step 7: Allow to roast at high temperature for the first 15 to 20 minutes or until lightly charred. Reduce temperature to 350 and continue cooking. After the first 30 minutes, remove from oven to baste, then return to the oven for another 30 minutes or until done. 

Step 8: Remove from oven, baste with pan drippings, allow to sit for a few minutes.

Plate and serve! This is a delicious one dish dinner.

Kathi Wins Writing Award

Canopy Rose owner, Kathi Dameron has won the 2nd Place Award in the Newspaper Article Category at the 2008 Southern Christian Writer's Conference in Tuscaloosa, Alabama for her article, Simple Act of Sharing Food Can Truly Bring People Together. This article appeared in the Northeast Chronicle - Tallahassee Democrat during the spring of 2008 in the Entertaining with Kathi column.

Grand Prize Winner In Cooking Contest

The year was 1987 when Kathi Dameron, a passionate gourmet cook who spent her days teaching 32 second graders, and her weekends hosting fun parties for her circle of friends at her waterfront home on Florida's North Hutchinson Island, won two prizes in the first cooking contest she ever entered. One of these prizes was the coveted Grand Prize. At that moment Kathi knew that one day in the not too distant future her special dream to launch her very own catering company would be realized. Seven years later that day arrived with the birth of Canopy Rose in Florida's Capital City in 1994.
