I just love that brief slice of time between Thanksgiving and early December. For me it's always been a time of transition from the charming rustic decor of autumn into the polished festiveness of Christmas.

The decorating that emerges pops with a whimsical harmony that puts a big smile on my face.

Thanksgiving 2011 was a busy season for Canopy Rose. For this year's Thanksgiving Holiday Orders the kitchen crew at Canopy Rose roasted turkeys for 120 people, ham for 100 people, whipped together half a dozen pans of Sweet Potato Casserole and Mashed Potatoes, the old fashioned way. The only way we know how is to use fresh potatoes that take hours to peel, and incorporate the best of ingredients. It has always been and always will be the Canopy Rose way to cook with the absolute best of the best ... real butter, real whipping cream, real potatoes, etc, etc you get the idea.

Did I also mention the multiple pans of Green Bean Casseroles, Mac and Cheese, Collard Greens, Holiday Turkey Dressing with Sausage, Mushrooms and Pecans, Gravy, Garden Party Salads, Sweet and Jazzy Dressing and Pecan Pies spiked with Jack Daniels!

As busy as we were in the catering kitchen, I paused occasionally to snap a couple of pictures of what we were preparing.

How To Host A Dinner Party: When A Tallahassee Area Caterer Entertains In Her Own Home

In today's post I'm taking you behind the scenes to one of my own little dinner parties that I hosted with my husband at our home on Saturday evening September 24, 2011.

Beginning with custom designed invitations a month before the party, every step of this party was a labor of love! Here are just a few random photos I snapped through the process.

I wanted each of the dining tables to look the same, yet didn't want to spend a king's ransom for matching place mats and napkins. My solution was to make place mats from orange felt. I've heard that felt place mats are very popular in Europe and sell for $$$$. I simply jaunted over to our local Hobby Lobby and asked for three yards of this popping orange felt. The cost of the 3 yards came to less than one of those chic European place mats! The black and white napkins came from another shopping expedition to one of my favorite shops, I bought every one they had in stock.

For a whimsical touch, I taped some big autumn leaf cut outs to the windows.

Each dining room gets its own buffet. Here is a picture of the salad I made for this party. This is very much like the salads I prepare for my catering clients. Basically it is a Canopy Rose Garden Party Salad, Autumn Style. Mixed Greens, Spinach, Almonds, Red Peppers, Yellow Peppers, Orange Grape Tomatoes, Cranberries and Blue Cheese and it's accompanied by the famous Canopy Rose Sweet and Jazzy Dressing!

Our entree was one of the wonderful Pasta Squares Casserole, like I make for my catering clients. For this soiree I whipped together Chicken, Spinach and Artichoke Pasta Squares and a Black Bean, Corn and Pepper Medley that was served hot from chafing dishes.

Watermelon Ying-Yang Salad

This salad pops with a yummy ying-yang of flavors. Flavor wise it's quite unusual, or perhaps I should say that this particular combination of ingredients is unusual to the part of the world where we live. However, that is not the case in Mediterranean countries where compositions such as this are far more common.

Look at the ingredients I used: Kalamata olives, pine nuts, feta cheese, fresh mint, olive oil, fresh ground pepper and then a true North Florida staple: watermelon. Who would think it would be so good with a taste sensation that really grows on you? Not me and I am usually one who can spot the recipes in a cookbook that are the keepers.

Lately I'd been seeing more and more versions of this sort of salad popping up in cookbooks and food blogs. So I was pretty curious about how something like this would taste. Since a friend was coming to our house for dinner tonight, I decided to try it out. This friend is a happy guinea pig, in all things culinary. So I knew if it ended up being a flavor flop, I could blame it all on being part of a taste test and if it was a hit, well then I'd have an intriguing new salad to offer to my dear catering clients. Sounded like a true win-win to me.

The preparation was so simple. Quite literally all you do is chop up some chunks of watermelon, top with fresh mint, sprinkle with feta cheese and pine nuts, stud with kalamata olives that have been sliced in half, drizzle with a bit of olive oil and dust with fresh ground pepper. It's that easy!

It was as though I was in training for my dream career.

A long-cherished dream had came true for me! We soon began cooking for a clientele list that read like the Who's Who of Florida. During the last 17 years, Canopy Rose has cooked for presidents, governors, supreme court justices, legislators, celebrities, athletes, movers and shakers, doctors, lawyers and Indian chiefs. We've cooked for brides and grooms, graduates, retirees and just everyday folks like you and me.

Sometimes our services are simple and streamlined, as in the case of our popular drop-off business luncheons. The food is fabulous, sans the frills.

Sometimes our services are over the top, exquisite, as in the case of a dream wedding reception.

According to national statistics, the average wedding today costs $23,657. Please keep in mind that this figure does not include the engagment ring or the honeymoon. A separate wedding budget should be set up for those. This figure is only an average. We talk with brides whose total wedding budgets are several times over the national average and also several times under the national average.

So the real value of the following list for any bride, regardless of their bottom line budget is the percentage. 46% of your overall budget should be allotted for your wedding reception.

What am I talking about? I'm talking about my new Saturday Night Dinner Party!

It's a great way to enjoy some of our delicious food, without having to host a fully catered soiree. (Of course, we are always happy to do that, too! Afterall, catering for weddings, birthday parties and office luncheons is our main bread and butter!)

But as you'll see these parties are a little different. This is how it works...

Each Saturday Night Dinner Party Menu/ Theme will be based on one of our delicious main dish entrees, either from our catering website, a new inspiration from our kitchen, a classic-tried-and- true favorite from our catering menu/ recipe archives, our cookbook library or from some other inspired source.

Someone asked a really good question. They wanted to know if they could select the entree of their choice. The answer is... OF COURSE, you can, providing that we are available to prepare the dish.
Say for example, you are planning on having 6 for dinner on a certain Saturday night in July. We suggest that you go ahead and contact us and book your dinner reservations. With enough advance notice, we would be honored to create our Saturday Night Dinner Party Menu for that night based on your taste preferences.

Bookings should be made EARLY! Your food will be prepared, packaged and available for pick-up on Saturday afternoon. All you'll have to do is take your food home, refrigerate and/ or gently reheat at dinner time.

It's like the best of all worlds... our incredible food....available in any number of servings and enjoyed in the comfort of your own home. We cook, you pick-it up and rake in the compliments. We won't tell anyone who did the cooking! Your secret is safe with us!

Some of best times I've had in my life were at parties with the girls! Going all the way back to my childhood, I remember the incredible fun that was shared at birthday parties, slumber parties; then oh my, what would I have done without my sorority sisters? As a young adult my favorite parties were ladies luncheons, showers and teas where fancy food was appreciated! Now, even more than ever I savor those special times and special foods shared in a setting of all girls. Whether it's a Chocolate Tasting Party, A Fundraising Tea, A Club Salad Luncheon, A Fashion Show Planning Committee Meeting, A Weekend at the Beach or Margaritas on Mondays... Girl Time is akin to breathing!

I received the following in an email. The message is so true! Enjoy!!!

A young wife sat on a sofa on a hot humid day, drinking iced tea and visiting with her mother. As they talked about life, about marriage, about the responsibilities of life and the obligations of adulthood, the mother clinked the ice cubes in her glass thoughtfully and turned a clear, sober glance upon her daughter.

be more important as you get older. No matter how much you love your husband, no matter how much you love the children you may have, you are still going to need sisters. What a funny piece of advice!' the young woman thought. Haven't I just gotten married? Haven't I just joined the couple-world? I'm now a married woman, for goodness sake! A grownup! Surely my husband and the family we may start will be all I need to make my life worthwhile!'

But she listened to her mother. She kept contact with her sisters and made more women friends each year. As the years tumbled by, one after another, she gradually came to understand that her mother really
knew what she was talking about. As time and nature work their changes and their mysteries upon a woman, sisters are the mainstays of her life. After more than 50 years of living in this world,
here is what I've learned:

Tallahassee brides often ask for us to make these for their wedding receptions. But these fabulous treats are not just for wedding day festivities, we've been asked to prepare them for graduation parties, birthday parties, anniversary celebrations, fundraising soirees, office luncheons and holiday gatherings. This summer I'll be traveling to a family wedding and plan to bake up a couple tins to share at a pre-wedding backyard barbecue.

They are called, Mexican Wedding Cakes and so in celebration of Cinco de Mayo today, I wanted to share this recipe with you! There are several versions for these yummy melt-in-your mouth cookies, but this is one of the simplest. Enjoy!!!

Mexican Wedding Cakes

1 cup (2 sticks) butter, softened
1 cup powdered sugar, divided
1 tsp. vanilla
2 cups flour
1 cup pecans, finely chopped

Preheat oven to 350°F. Beat butter, 1/2 cup of the powdered sugar and the vanilla in large bowl with electric mixer on medium speed until light and fluffy. Gradually add flour and pecans, beating on low speed after each addition until well blended.

Roll dough into 1-inch balls. Place, 1-1/2 inches apart, on ungreased baking sheets.

Bake 14 to 15 min. or until bottoms of cookies are lightly browned. Cool 5 min. on baking sheets. Roll warm cookies in remaining 1/2 cup powdered sugar until evenly coated; place on wire racks. Cool completely. Store in tightly covered container at room temperature.

Designing exquisite menus for dinner parties has always been one of my passions. Occasionally, we get the opportunity to pull out all the stops for a special event.

My client, the beautiful wife of a prominent politician had asked for an indulgent menu that would embrace her guest's senses in uncommonly delicious ways.

There was one hitch.

The menu needed to be based on meat and potatoes.

For your convenience we've provided a basic timeline for planning your wedding. Have fun, pop the champagne and tweak as necessary.
9 to 12 Months Before Wedding

* Set up a realistic wedding budget.

* Decide on a desired wedding date.

In the Tallahassee / Havana area, Canopy Rose Culinary Arts Studio and Catering Company offers a delicious selection of Thanksgiving entertaining options.

"Complete dinners and / or ala cart menu options need to be placed well in advance. Beginning November 3, 2010 we will be taking reservations for Thanksgiving Parties To-Go," Chef / Owner Kathi Bess reported in a recent conversation.

"So when is the cut-off date for ordering specialty foods for Thanksgiving?"

"Well, traditionally the cut-off date is about a week before Thanksgiving. While that is not completely set in stone, it's a fairly good rule of thumb. The bottom line is this: CALL EARLY! The earlier you call, the better the chance that you'll have for beating the crowd and being able to get your foods from Canopy Rose!"
